How Does Calcium Peroxide Work?

In the food industry, it functions as a dough conditioner and processing aid, particularly in yeast-leavened products. By promoting disulfide bond formation within the gluten matrix, it enhances dough strength, elasticity, and water absorption—resulting in improved texture and yield. During baking, calcium peroxide decomposes into calcium and oxygen, completing its role without leaving residues.
